FRIED SCUP

 

There was one fish I loved to eat as a kid. We had a light blue wooden skiff with oars tied to our pier. I loved rowing out with quarterdecks as bait anchoring and fishing early in the morning with drop line and sinker to catch scup (around here, it would be like spot). I'd take them up to Rilla (whom I adored) our cook and she'd get rid of the guts and scales, and dredge them in corn meal and fry them.

They were small and crisp, and Rilla fed them to me in the kitchen for breakfast.

Heavenly! Or was it just my Rilla with her beautiful front gold tooth and her adoration of me. I miss her and the scup adventures. The recipe belongs to Rilla.
